yet it won’t let me up my video quality unless I upgrade… guess I’ll be doing some research after the game. Notably, checking my credit card to make sure I didn’t get charged for the upgrade when I clicked the link if the upgrade didn’t take.

First I've heard of any sort of "nexdef"
I thought I just needed the latest flash version, now that they don’t use silverlight anymore.
Nope.
When you try to up the video quality, it should give you an option to upgrade to the newest version of NexDef. There should also be a link to it on the FAQ page for MLB.tv.
