1. Final Fantasy VII
2. Final Fantasy Tactics
3. Elder Scrolls III: Morrowind
4. Civilization IV
5. Age of Empires II
A few honorable mentions: Knights of the Old Republic, Armored Core: Masters of the Arena, Neverwinter Nights (Specifically the Shadow of Undentide and Hordes of the Underdark expansions), and Heroes of Might and Magic III.
